Abstract

The structural aspects and main functions of vitamin B1 or thiamine are discussed. It cites the main foods rich in this vitamin and its nutritional requirements, according to data provided by the Food and Agriculture Organization and the World Health Organization. The main clinical manifestations that characterize the thiamine deficiency status are analyzed and some techniques are used to evaluate the nutritional status of thiamine.
